How to Make American Style Pancakes
You’ll need:
- 3 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 heaping teaspoon cinnamon, chai spice mix, or Chinese 5 spice mix
Mix these together with a spoon or whisk.
In a separate bowl, put in:
- 2 large eggs or 3 medium ones
- 2 heaping teaspoons of sugar or 1 teaspoon sugar and 2 drops stevia liquid or a packet of stevia powder
- 1 tablespoon sunflower seed oil or ghee
Whisk until fully smooth.
Add the wet to the dry, and start stirring. Gradually add a cup of butter milk, and then enough water to make it a batter. Use more if you like thinner pancakes. Get it to “mud” level if you prefer thicker pancakes.
Turn your pan on medium-high heat and wait until it is very hot. You can test this with droplets of water. If it sizzles right away, the pan is ready.
Add 2 tablespoons of oil to the pan and then using a ladle or large spoon, pour your pancakes the size you like. I recommend making them not much wider than your spatula.
When there are many bubbles coming up, turn the pancakes over.
When both sides are golden brown, transfer them to a plate and do the process again until you run out of batter.
